Winemaking

Winemaking is undertaken each vintage by managing small volume open fermenters for each of our red wines - we believe this helps us achieve good colour and tannin extraction and enables us to carefully manage ferment speed and temperature. A mixture of natural yeast and inoculated ferments are used to produce our red wines. Our white wine fermentation is managed in closed stainless steel vessels and at low temperatures to maintain floral and fruit aromatics. Minimal sulphur dioxide is added during the winemaking process to prevent spoilage.  Our wines are gluten and vegan friendly.
